What are cheese curds? Cheese curds are young cheddar Wisconsin cheese in its natural, random shape. Curds have a mild flavor and smooth texture and when fresh will literally squeak as you chew them. They should be served at room temperature. White cheese curds is the key ingredient for Poutine (a Quebec favorite that combines cheese curds, fries, and gravy). Here is a Poutine recipe. Many customers warm them for a couple of seconds in a microwave after they have been refrigerated to restore the desired texture.
